You can use less oil, but you'll need to cook the potatoes pretty slowly, and with a lid. The idea is to get the potatoes very soft without having any crispies.  

FYI, since I started cooking almost exclusively with olive oil (except for baking) I have lost weight and my doc says I have the best "good" cholesterol levels he's ever seen in his practice. :-)  Somebody will kill me for saying this, but I never scrimp on olive oil.  Let me know how it turns out and thanks for checkin' in.
